Happy Saturday! Early post today since I've got some deliciousness going on in the kitchen this morning! =)
No-Bake Breakfast Bites
These are great for breakfast-on-the-go, which, as covered before, is pretty much the only way I ever eat breakfast.
Ingredients
2/3C raw almonds
2/3C raw walnuts
1C rolled oats
1/4 tsp ground cinnamon
1/8tsp salt (I usually skip the salt)
1/4C local honey, or raw agave nectar
2 tsp vanilla extract
5 Tbsp chocolate chips
Directions
Add almonds, walnuts, oaks, cinnamon and salt to food processor and blend until fine.
Add honey/agave nectar and vanilla extract.
Add chocolate chips. Blend until chocolate chips are chopped and blended in.
Roll into 1 Tbsp balls; I use my fabulous Pampered Chef Small Scoop!
Store in air-tight container in fridge.

OR...here's a variation I've done before with dried fruit, peanut butter, coconut and flaxseeds...
2 cups old-fashioned rolled oats
1 cup peanut butter (can substitute favorite nut butter)
2/3 cup honey
2 cups shredded coconut
1 cup ground flaxseed
1 cup mini chocolate chips
1/2 cup dried organic cherries (can substitute favorite dried fruit)
2 teaspoons vanilla extract

Yummmm! In our house a batch of these usually makes enough to last about a week to two weeks, eating 1-2 of the bites per serving for breakfast and, occasionally, snacks.
